This is my no-fail knock-your-sox-off trick-u-into-eating-healthy chocolate mousse dessert. It’s compared to brownie batter. Simple and quick, hypoallergenic and uber chocolatey, it’s sure to please. Serve it in martini glasses for a chic look.
Ingredients:
- 2 ripe avocados
- 1 c cashews
- 2 c pitted dates
- 10 tbsp raw cacao powder
- ¼ tsp salt
- 1 tsp vanilla extract
- garnish: raspberries (optional)
Preparation:
- Soak dates and cashews for 30 minutes in water.
- Reserve soaking water.
- Blend all ingredients (except garnish) in food processor. Add splashes of soaking water as needed.
- Transfer to bowl, garnish, and serve.
