Keto Mixed Green Spring Salad

With the summer heat quickly approaching, a refreshing and filling salad is something that really fits the bill. A lot of people tend to think that salads are boring, plain, and only really eaten by people on a “diet”. I tend to load my salads up, and bring the flavour with it – it’s a great vehicle for many different tastes. Plus, the dressing you use is going to be loaded with fats, which means the macros are perfect for keto. Using the Raspberry Vinaigrette as the dressing, you can achieve a really robust and well-rounded flavour profile in this salad.

The Preparation

2 ounces mixed greens
3 tablespoons roasted pine nuts
2 tablespoons Raspberry Vinaigrette
2 tablespoons shaved Parmesan
2 slices bacon
Salt and pepper to taste

The Execution

Cook the bacon in a pan until nice and crisp.
Crumble and add to salad with the rest of the ingredients.
Shake or mix salad until well dressed. Serve.
