Ingredients
- 1/4 cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon cumin seeds, crushed
- 1 garlic clove, minced
- 1/2 pound snap peas, chopped
- 1 tomato, chopped
- 2 scallions, thinly sliced
- 1 cup canned chickpeas
- 1/3 cup chopped parsley
- 3 cups cooked bulgur
How to Make It
Step
In a large bowl, whisk the olive oil with the lemon juice, cumin seeds, and garlic. Add the snap peas, tomato, scallions, chickpeas, parsley and bulgur and season with salt and pepper. Mix well.
