    This refreshing salad with watermelon, feta cheese, and fresh mint is simply dressed with olive oil and lime juice. Perfect for summer. Ingredients 8 lb. whole seedless watermelon, chilled (about 12 cups of cubed fruit) 1/4 cup extra virgin olive oil 3 whole limes, juiced 1 1/2 tsp salt 3/4 tsp black pepper 1 cup fresh mint leaves, chopped 1 1/2 cups crumbled feta cheese (sheep’s milk feta preferred) Instructions Note: This salad is best made just prior to serving.     Avocado Feta Dip

    A creamy, flavorful summer dip. Perfect for an afternoon picnic or barbecue. Ingredients 1 avocado – diced and removed from peel 4 oz feta cheese 1 lemon – juiced 2 or 3 scallions – roughly chopped 1 large handful of parsley 8 twists of black pepper (from a pepper mill) Instructions Add avocado, feta cheese, juice of one lemon, scallions, parsley and pepper to food processor. Pulse food processor until desired consistency – I liked mine to be slightly chunky.
