Zucchini Boats

turkey zucchini boats

Thank you to our patient Pauline S for this delicious recipe! I tried it last week, and it is amazing!

2 medium zucchinis

¾ pound ground turkey

1 small chopped onion

1 cup of cheese or cheese alternative (i used goat cheese)

2 Tbsp tomato paste

½ tsp sea salt

¼ tsp pepper

½ cup sliced mushrooms

½ cup chopped red pepper

½ cup chopped green pepper



Trim the ends of the zucchini and cut in half lengthwise.

Scoop out the pulp.

Finely chop the pulp.

In a skillet cook the turkey, zucchini pulp, onion, mushroom, and pepper.

Remove from heat and add ½ cup of cheese, tomato paste, sea salt and pepper

Mix well.

Spoon mixture into the zucchini shells

Place in a coconut oiled baking dish

Sprinkle the remaining cheese, and bake uncovered 350 for 30min
