KETO SHRIMP GUACAMOLE AND BACON APPETIZERS (bacon optional)

INGREDIENTS

For the Guacamole:

  • 2 Small avocados
  • 1/2 Cup Minced red onion
  • 1/2 Lime, juiced
  • 1/3 Cup Fresh cilantro lightly packed
  • 1/2 teaspoon Salt

For the Shrimp:

  • 20 pre-cooked shrimp
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/2 teaspoon Cumin
  • 2 Tablespoons Butter

Other Ingredients:

  • 1 10 inch Cucumber, cut 1/2 inch slices

EQUIPMENT

  • Food Processor

INSTRUCTIONS

Make the Guacamole

  • Add all the ingredients for the guacamole to a food processor and pulse until all combined.You want the guacamole to be a little chunky. Taste for seasoning and adjust to your taste.

Assemble the Keto Appetizers:

  • Lay out the cucumber slices on a platter and season with salt.Top with one slice of bacon followed by a spoonful of guacamole.Finish off with a shrimp and secure with a toothpick.

JENNIFER’S TIPS

  • We stuck the toothpick right in the center of the shrimp.  If you try to put the toothpick through the shrimp, guacamole will get squeezed out and mess up your keto appetizers
